The Next Best Thing

I made three recipes for the first time yesterday.  Two of them I had never made NOR eaten before, and one I have had more times than I can remember, I just never MADE it. The first two were very yummy.  Basil, tomato and mozzarella paninis – very yummy.  Roasted asparagus sort of wrapped in bacon.  Also very yummy.  Apparently Kroger-not being the uppity high class type of place, doesn’t sell prosciutto.  So I substituted with pre-cooked bacon….well it IS from the same animal at least.  The roasted asparagus was so good though. I’ll put the recipe up on Food Love shortly.

But the best thing I made….was shortcake.  Grandma’s shortcake made for the sole purpose of having ‘Strawberry Shortcake’.   So good.  Since strawberries are still  technically in season, I was able to find some decent ones at the grocery.   I followed the recipe which thankfully was only missing ONE crucial piece of information – The Cooking Time.  That was solved by hanging out by the oven for what turning into about 35 minutes with a toothpick.   Amazingly, out came a super yummy sponge cake with, and I’m very proud of this for my first attempt, perfectly golden melts-in-your-mouth edges.  Covered it in strawberries with sugar.  So good.  I have a lot left….so come on over.  =)  Those of us who don’t live in a strawberry patch do what we can.  The only drawback was that I didn’t start making it until late, and wasn’t finished (consider the unknown time factor) until 10:15pm last night – just in time for a sugar rush.  Oh well, it was worth it.  So good.
