Because I had to…

I don’t really feel like posting much, but I had to. I wore my awesome shirt that I got as a Christmas present from Charlene that says “I’m blogging this.” Therefore, I had to blog today or it just wouldn’t be right. My brain is tired and I’m tired of making decisions and worrying about stuff getting done. But the week is over. Now I just have to clean the house. I could really go for some carbs right now. But I haven’t cheated on phase one and i’m not going to start. later all.

  • broccoflower - Phase 1 = south beach?

    I have a good, EASY crockpot recipe for phase 1.

  • K - Yes, south beach. I love crock pot recipes! I use mine every week! THey have those new crockpot liners so you don’t even have to clean them!! Send it over!

  • broccoflower - Lemon Pepper Chicken

    Put 4 boneless skinless chicken breasts in the crockpot (ok if they’re still frozen). Add one onion, peeled and quartered. Sprinkle lemon pepper over everything, liberally.

    Cook until it’s done– 4 hours on high, 6 hours or so on low. You’ll know when it’s done because the chicken will be brown and tender.

    Don’t add any water or liquid; the chicken cooks in the water left behind by the onion.

    I’ve made it for sooooooo many people, and Kirk loves this.

  • K - There is one I have that I love called “super easy chicken” and it is.
    Put FROZEN, (that’s my favorite part) chicken breasts in crock pot. 1 cup of water or broth, and 1 packet of italian dressing seasoning. Cook for like 6 or 8 hours on low, depending on how hot your pot gets. TAda. sooo yummy and so easy too. thanks for the lemon pepper recipe!

  • broccoflower - I do that too, but I use 1/4 c dry white wine instead of water!

    I’m not 100% fond of “fix it and forget it lightly;” I own it but couldn’t find a lot in it that I really wanted to make. I prefer “busy people’s slow cooker cookbook,” which I got at Sam’s Club.

  • K - I just like it because there are a lot of phase one friendly recipes in it.
